Coconut Lime Cauliflower "Rice"

This tasty vegetable dish can be customized to taste and budget in so many ways. Great for low-carb, vegetarian, vegan, gluten free,dairy free and low budget diets.

Add some protein of your choice or substitute different vegetables for what you prefer of have available. Lemon in place of lime is another alternative that I like. Or use sweetened coconut and coconut milk for a, well, sweeter flavor. If you happen to live near a Trader Joe's, you can pick up pre-riced cauliflower and Dorot frozen basil cubes for convenience. Otherwise, you can use a food processor, a cheese shredder, or chop it manually (though it will probably be less finely chopped if you go this way- it will be just as tasty!)

2 cups riced cauliflower 1 mini baby bell pepper, chopped 1/4 cup sliced scallion 2 tablespoons unsweetened flaked coconut 1/4 cup unsweetened coconut milk 1/2 teaspoon basil paste or one frozen Dorot basil cube Zest of one lime

Toss it all in a saucepan, put a lid on it, heat over medium heat to desired crispness or softness, stirring occasionally.
